The redcurrant season is short, just a few weeks in midsummer, so don’t miss it. Redcurrants are rich in natural pectin and acid, making them a top-rate fruit for making jelly. Redcurrant jelly is a traditional accompaniment to roast lamb, as the acidity of the jelly balances the richness of the meat. It’s also excellent with poultry, sausages and oily fish. A spoonful added to caramelised onions or the Sunday gravy works wonders.

Wash, top and tail the gooseberries, discarding any that are damaged. Place a saucer into the freezer. Put the gooseberries and 150ml/5fl oz water into a large pan or preserving pan. Bring to the boil and simmer for about 10 minutes until the fruit is softened. Stir in the sugar and cook over a low heat until the sugar has dissolved. Increase the heat and boil rapidly for 8-10 minutes before testing to see if set.
