Put the raspberries in a large heavy-based pan or preserving pan. Sprinkle in the sugar, a third at a time, gently shaking the pan so the sugar is well distributed. Cover and leave for a couple of hours or overnight to draw out the juices. Lightly stir the mixture with a wooden spoon or spatula to break up any clumps of sugar. Place the pan over a medium heat and bring to a steady boil, then boil for 5–6 minutes for a soft set jam, or 7–8 minutes for a firmer set.

Put the cabbage in a large lidded pan. Cover with water and boil for 3 minutes. Drain and return to the pan. Add the rapeseed oil and stir to coat the cabbage. Season with salt and pepper. Cover and cook over a very low heat, stirring the cabbage every now and again, for 20 minutes or until softened. Rub the chops with the olive oil and season on both sides with salt and pepper.
