Easter is early this year, with the four-day weekend taking place from Good Friday (March 29) until April 1, which will be Easter Monday. While there are still a few weeks to go until the first long weekend of the year, the hunt is well and truly on for 2024’s clutch of incredible Easter eggs. In the American south, coconut cakes are a Christmas tradition. There are myriad variations: some call for fresh coconut, some desiccated, some flaked, some toasted. I love the snowy appeal of a coconut cake in the winter, and it’s a welcome alternative to a rich fruit cake. Poire belle hélène, or poached pears with chocolate sauce, is both elegant and simple, not to mention refreshing after a large meal. These two desserts go surprisingly well together on the table – or even on the same plate.

An old-fashioned English dessert, eve’s pudding is usually made with apples (hence the biblical name). This fluffy sponge topping works well with any fruit you might put into a cobbler, crumble or crisp, so I put it into the California section of my book, Love is a Pink Cake, where we make those a lot. We photographed the book during pear season, so we use them here to great effect. I love the subtle fragrance of pears, which often gets lost under cinnamon and other spices.
