STEP 1In a large skillet with a lid, warm the olive oil over medium-high heat, then add the onion and stir to coat in the oil. Reduce the heat to medium-low and cook, stirring occasionally, until the onions are softened and slightly translucent, about five minutes. STEP 1Add the lentils to a saucepan and cover with the water. Bring to a boil, then reduce the heat and simmer until the lentils are tender, about 20 minutes. STEP 2Place a large skillet over medium heat and add the olive oil. Add the onions and bell pepper and cook until softened, about eight minutes. Add the garlic and stir until fragrant, about 30 seconds. STEP 3Add the cumin, paprika, salt, pepper, and anchovies, and stir to combine.

STEP 1To make the compote, add the raspberries, lemon juice, maple syrup, and vanilla extract to a small saucepan and bring mixture to a boil over medium-high heat. Stir often. Reduce heat to medium-low. Keep stirring and use a fork for whisk to mash the fruit. When it has reduced by about half and is quite thick, turn off the heat, stir in the chia seeds and set aside to cool. STEP 2To make the pancakes, in a medium bowl, use a fork to mash the banana thoroughly.
