When I think of the title of this book, Live to Eat, it’s more than just a phrase to me – it’s an ethos, a way of life and an overarching philosophy that has shaped everything I do both in and out of the kitchen. It’s about celebrating food, loving every bite and understanding that healthy eating doesn’t have to mean sacrificing incredible flavours or joyful dishes. Eating well should be something we can look forward to, not a monotonous chore we dread.

This cookbook is a love letter to food, community, friendship and family. It’s for that big house share who each have their own bottle of olive oil but could so easily be sharing. For couples who love to host their friends and are always looking for an excuse for a dinner party. For families who want to eat delicious, affordable food but get stuck in a rut with the same recipes on repeat. For those people who live alone and want new and interesting ways to feed themselves.

The restaurant from my childhood that will always stay me sadly doesn’t exist anymore. It was a local sit-in Italian café/fish and chip shop on Byres Road in Glasgow called Jack McPhee. It had those old-school brown tiles everywhere and red checkered plastic covers on the table. I loved it. I also used to enjoy incorrect carbonara from there as a kid – lashings of cream and probably chicken stock in it. I’ll always have time for the incorrect version.

My last big, multi-location trip was to Mexico for my honeymoon last year. We flew into Cancun and stayed in Maroma, a Belmond hotel. This was the perfect start to our trip – relaxing into the time zone with the most incredible rooms, staff and food. We felt ready for the rest of our holiday when we left. We drove from Merida to Hacienda Temozón, which was the most remote place I’ve ever stayed.
