Lightly grease three rectangular-shaped trays or dishes that are approximately 18x24cm/7x9½in with butter and set aside. To make the mushroom ragù, heat the oil in a heavy-based saucepan over medium heat and fry the onion and thyme for a couple of minutes, or until the pancetta begins to colour. Stir in the mushrooms, season with salt and pepper and fry over a medium–high heat for 2–3 minutes.

To marinade the chicken, put the buttermilk and curry powder into a bowl, add a generous pinch of salt and mix well. Cut each thigh into 3 equal pieces and add to buttermilk mixture. Cover and set aside in the fridge to marinade, ideally for 24 hours. In a medium bowl, mix the semolina and tapioca then season with salt and pepper. Set your deep fat fryer to 170C. (CAUTION: hot oil can be dangerous.

With delicious sausage patties, smoked streaky bacon, a perfectly fried egg and finished with tangy Scotch bonnet jam, it’s the perfect Good Friday treat.

Slow-cooker spring chicken and herb soupAn alternative option is to use a whole chicken instead of the thighs in this soup. Shred the leg and thigh meat as per the recipe and keep the breast meat for sandwiches. MethodPreheat the slow cooker to the lowest setting and boil the kettle. Put the chicken thighs and onions into the slow cooker with the mustard powder, stock pots, wholegrain mustard and bay leaves. Pour over the boiling water, put on the lid and leave to cook for 5 hours.
