• None In a food processor, combine the green seasoning, carrot tops and chives. With the motor running, drizzle in the olive oil until you have a chunky pesto-like texture. Transfer to a bowl and wash the food processor bowl. • None Put the feta and yogurt in the clean food processor and whizz until smooth. Season with salt and pepper. • None Serve the whipped feta with the green sauce swirled through and top with a little extra oil, black pepper, toasted seeds, any reserved carrot tops.

In my family, in the 1970s, our jerk chicken was not always made with young chicken, but cleaning the meat by rubbing it with lemon, then brining, then marinating, then cooking it over a smoky barbecue made it very flavoursome. The chicken you buy these days is usually young and doesn’t need brining, but the brine will plump up the chicken and add flavour.
