Lightly grease three rectangular-shaped trays or dishes that are approximately 18x24cm/7x9½in with butter and set aside. To make the mushroom ragù, heat the oil in a heavy-based saucepan over medium heat and fry the onion and thyme for a couple of minutes, or until the pancetta begins to colour. Stir in the mushrooms, season with salt and pepper and fry over a medium–high heat for 2–3 minutes.

Mix the gluten-free self-raising flour, gluten-free baking powder and sugar together in a large mixing bowl. Add the eggs and milk to a jug and beat thoroughly. Create a well in the flour mixture and pour in the wet ingredients. Whisk until smooth and consistent. Brush a frying pan with a light coating of oil or butter and warm over a low-medium heat. Test if it's ready by spooning in a small drip of pancake batter; if it sizzles slightly, then it's ready.

Cook the cauliflower florets in a pan of boiling water for 7–8 minutes, until soft but still holding their shape. Drain thoroughly, then tip onto a plate lined with kitchen paper and leave to cool. Grate the cooked cauliflower with a cheese grater into a bowl, then add the spinach, beans, garlic, soy sauce and mixed herbs. Work the mixture together with a potato masher to form a rough paste. Blend the oats to a fine powder with a stick blender, then add to the bowl and mix to combine.
