As you're making your way along South Houghton Road toward the Pima County Fairgrounds this weekend, do yourself a favor: As you get close, roll down the window and inhale. Can you smell that? It's the fragrant intersection of sweet and savory, dirt and dung, with the slight stench of a Mikeās Hot Honey turkey leg and a dirty soda misadventure on The Titan. Coulda been that second round of flips and twists and the downhill burst going 60 that did it. Ahhhh, yes, it's that time of year again.

Three years ago, Cheyenne and Cruz Guzman scribbled down a dream of theirs in a notebook. The couple fell in love at the restaurant they worked at; Cheyenne was a server and Cruz worked as a chef. When they started dating, the pair wrote down a crazy idea they had, aiming to one day make it a reality. Written down on the piece of paper were two words: food truck. When you make your way through the pastel green door that lines up against the building of the historic train depot, you’ll notice crowds of people sitting around with slate boards in front of them. Five small glasses filled with dark red and white liquid are neatly placed on the boards. Next to them sits a beaker that people meticulously pour the liquids into, swishing them around and taking a sip before jotting down notes and moving onto the next combination.

As you make your way down the Kolb Road and Speedway intersection, a small sidewalk sign can’t help but catch your eye. The words “donuts and fried chicken” are printed across the A-frame, jumping out at anyone who drives by. It’s hard not to swerve into traffic as you take in the odd combination, images of pink-frosted doughnuts and golden-brown drumsticks dancing around in your head.
