    Put the ribs in a deep baking tray. Fill with enough water to submerge them, cover, then soak for 30–45 minutes, changing the water once or twice. Drain. Meanwhile, put all the remaining ingredients in a food processor and blend until smooth. Put the soaked ribs and marinade in a baking tray or wide, flat bowl. Using your hands, massage the sauce into the meat. Cover and refrigerate overnight. If cooking on the hob, put a heavy griddle pan over a medium-high heat.

    For me, the sunny yellow colour and crisp, juicy kernels of sweetcorn encapsulate summer. But while tinned sweetcorn is a store-cupboard staple, and delicious in these scones and salad, fresh corn on the cob is reaching its peak right now, so it’s worth getting your hands on some, if you can. Chargrilling fresh corn in a pan or, better still, on a barbecue is the ideal cooking method.

    Across Korea, kimchi is eaten throughout the day, either alongside or as an integral ingredient of every meal. There are endless varieties, from the ubiquitous fire-red, spicy hit of baechu cabbage kimchi to the altogether more subtly flavoured but no less addictive dongchimi radish water kimchi. Here in the UK, kimchi is now widely available, and while it is wonderful eaten raw, these mini kimchi pancakes and kimchi fried rice are a great way to cook with it.

    Preheat the oven to 180C/160C Fan/Gas 4. Grease the tine and line with baking paper. Whisk the eggs in a stand mixer or with an electric whisk, on a high speed for 4–5 minutes, until thickened and increased in volume. Melt the coconut oil in a saucepan over a low heat. Pour into a large bowl and stir in the honey, almonds, flour, lemon zest, vanilla, bicarbonate of soda, baking powder and salt. Fold in the whipped eggs until just combined.

    Preheat the oven to 200C/400F/Gas 6. Line two 12-hole muffin trays with paper cases. Cream the butter and sugar together, preferably with an electric whisk, in a large bowl until the mixture is light and fluffy. (This can take 5-7 minutes, so this stage should not be rushed.)Beat in the eggs, one at a time, until well combined. (If the mixture looks like it is curdling add a spoonful of the flour.) Fold in the remaining flour with a metal spoon until you have a soft, smooth mixture.
