Bring a large saucepan of salted water to the boil, add the rice, stir well, then cook according to the packet instructions. Heat a wok over a high heat until hot. Add half the oil and, when it’s just smoking, add the beef. Sprinkle with cornflour and stir-fry until browned all over. Remove from the pan and set aside. Stir-fry the cashews until just golden, then set aside. Carefully wipe the wok until clean using kitchen paper. Bring to a high heat and add the remaining oil.

Combine the oats, chia seeds, cardamom, natural yoghurt, milk, and most of the hazelnuts, walnuts and almonds in a large lidded box with the honey. Keep a third of the nuts aside for using as a garnish. Stir everything together really well to combine. Leave in the fridge for at least 4 hours, or ideally overnight, so that the mixture can thicken. To serve, you can either spoon the oat mixture into 4 bowls.

Preheat the oven to 210C/190C Fan/Gas 6½. Put the broccoli in a large bowl, pour over boiling water and leave to sit for 2 minutes, then drain well. Put the drained broccoli into a large roasting tin along with the courgettes, half of the chillies, the ginger, turmeric, garlic, salt and coconut milk and mix well. Bake for 25 minutes. Scatter over the cashew nuts, then return to the oven for 5 minutes, or until the cashew nuts are just toasted, and the broccoli and courgette are cooked through.

Combine the beaten eggs, sesame oil and salt in a small bowl. Set aside. To make the sauce, mix the light soy sauce and sesame oil in a small bowl and set aside. Put the lettuce or cabbage in a bowl of ice cold water. This will help to crisp up the leaves and provide a crunch to the finished dish. Make sure you have all your ingredients prepared and ready. You can set them all up clockwise on a large plate in this order – eggs, carrot, beans, petit pois, rice, sauce and spring onions.
