1. IntroductionElderberry is a robust and underutilized fruit used for value-added products [1]. The elderberry crop has shown a great capacity to adapt to many climate conditions [2]. For this reason, there is an increasing interest in wild-growing plant species rich in bioactive compounds [3]. In line with this, high amounts of elderberries from wild-growing shrubs are used for industrial purposes [4].
