Do you have a recipe that every time you make it, it transports you to a certain time in your life? I do, and this is the recipe that makes me think about my Mamá Mila in her kitchen in Culiacan, Sinaloa. She used to make this for me every time we spent Christmas with her. She would make a big jar just for me and we would travel back to Ensenada with it. I loved to eat it mixed with milk for supper.

At home, my mum loves making these quite often as they are quick and easy to make, especially if you use shop-bought tortillas. The potato mixture can be made a day in advance as well as the pickled red onion – or why not make this recipe with leftover mashed potato? Note: for these fried taquitos you can also use mashed sweet potato, celeriac or even some mushy peas in place of the red potato. You can mix some cooked shredded chicken or beef into the mashed potato, if you like.
