Hainanese chicken is one of my staple comfort foods. It’s the national dish of Singapore. The chicken is poached in a ginger and spring onion broth, which is then used to make the rice and served with a spring onion oil and chilli oil. So incredibly simple but so delicious. This salmon version hits all the right spots, and you still get that crispy salmon skin that we all know and love. 1 Wash the rice three times in cold water until it runs almost clear.
