    STEP 1Place a large pot over medium heat, then add the olive oil and heat until shimmering. Add the onion and cook, stirring occasionally, until slightly softened, about five minutes. STEP 2Add the turmeric, ginger, and garlic and cook until very fragrant, about 30 seconds. STEP 3Add the salt, pepper, and bay leaves and stir, then pour in the chicken stock and bring the mixture to a boil. Reduce to a simmer and cook for 15 minutes.
