Step 1Preheat the oven to 340°F. Step 2To make the roasted strawberries, place the strawberries on a baking tray lined with parchment paper. Sprinkle the sugar over the top and gently work it into the strawberries with your fingertips. Step 3Place the tray in the oven and roast the strawberries for 25 to 30 minutes, or until they're soft and juicy. Be careful not to burn them. Remove the tray from the oven and transfer the strawberries to a large bowl to cool.

There are three different components to build strong, bold garlic flavors: roasted garlic paste, minced raw garlic, and garlic powder. Achiote (also known as annatto) gives the spice blend that flavors, and colors, this pilaf a beautiful ochre hue and a distinctive earthy taste. Make sure to buy it powdered, as the whole seeds are very hard and can be difficult to break down at home.
