From 1994 to 2002, Claudia Fleming was the architect behind the desserts coming out of Gramercy Tavern's kitchen in New York City. With every cake, cookie, and tart, Fleming unwittingly changed how America perceived the last course of an elegant meal. "Her desserts were stylish, not stylized," explains Celia Sacks of San Francisco's Omnivore Books. They had an element of approachability and fun rarely found at fine-dining restaurants at the time.

Step 1Preheat the oven to 340°F. Step 2To make the roasted strawberries, place the strawberries on a baking tray lined with parchment paper. Sprinkle the sugar over the top and gently work it into the strawberries with your fingertips. Step 3Place the tray in the oven and roast the strawberries for 25 to 30 minutes, or until they're soft and juicy. Be careful not to burn them. Remove the tray from the oven and transfer the strawberries to a large bowl to cool.

If you get coffee in New Orleans-at a restaurant, someone's house, an office, or anywhere that pre-gentrification New Orleanians exist-it'll likely contain the rich, complex, roasty, toasty flavor of dried chicory root. Coffee with chicory is what New Orleanians are used to. It's a smell that comforts us, and a familiar childhood taste. As a native New Orleanian, coffee without chicory feels thin and hollow to me. It's just flat, like something's missing.

When you bring produce into your home, whether from the supermarket, farmers market, roadside stand, or even from your backyard garden, do you wash it?
