Cotter Crunch
Hello! I'm Lindsay Cotter, the creator of Cotter Crunch, and I'm thrilled to welcome you! In 2009, I founded Cotter Crunch with inspiration from my husband, a former triathlete. While preparing meals to help him stay healthy and energized for his races, I started sharing my recipes on his blog. This journey led me to establish my own platform, where I focus on offering nutrition resources for athletes. My recipes emphasize the use of REAL FOODS to support performance and recovery.

Sweet, moist, and almost too pretty to eat, this Gluten Free Carrot Cake Recipe features two layers of cake with a homemade cream cheese frosting but can easily be made into a single layer, too. Topped with nuts and a bit of orange zest, it looks like it came straight from a bakery and is so good no one even realizes it’s gluten-free! Personal Note – Carrot cake has always been one of those desserts I enjoy for a season.
