You'll find nutrition facts included in some of my recipes because many of you have requested it. However, my approach to cooking isn't centered around numbers. I prioritize a diet rich in plant-based foods, with small amounts of dairy or eggs occasionally included. My journey began in high school when I first became a vegetarian. I've transitioned back and forth over the years, even trying veganism during grad school for a while. Now, I identify as mainly plant-based, enjoying a variety of plant foods while occasionally incorporating animal products. This eating style brings me the most comfort, and it's reflected in the recipes you'll discover here.
