Hi there! I'm Karen—a certified health coach, passionate about whole foods, a photographer, and a food blogger. I earned my health coaching certification from the Institute for Integrative Nutrition in 2020. As a busy mom and wife, I balance practices, homework, and family dinners. My husband, Jim, and I are proud parents of three teenagers aged 16, 15, and 13, along with our adorable dog, Cooper. 🐶 I hold a Master's Degree in Technology in Education from Harvard University, which I completed in 2003.     Add bread and melted butter to baking sheet and toss to combine. Broil for 6 mins turning once until golden brown. Mix the dressing ingredients together in a small bowl. Heat the olive oil in a non-stick pan. Add the deli corned beef and cook on a medium heat for 6 minutes until slightly crisp. Add the cabbage, carrot, spring onions and cook for 3 more minutes until softened. Stir in the sauerkraut, caraway, salt and pepper and cook for 1 minute.

    Add the psyllium husk powder and ½ cup lukewarm water to a small bowl and stir to combine. Mix the yeast with the remaining ¼ cup of water and sugar and allow to rest for 10 minutes to activate the yeast. It will start to bubble when it’s ready. Add the dry ingredients (flour, tapioca starch and salt) to a mixing bowl or stand mixer bowl. Stir and then add the activated yeast mix, psyllium mix, olive oil and apple cider vinegar.

    Spread a tablespoon of pesto sauce on each slice of sourdough bread. Place 4 slices of roasted turkey on one side. Add 3 slices of provolone cheese over the turkey. Layer tomato slices and baby spinach over the turkey. Season with salt and pepper if desired. Place the remaining sourdough slices (pesto side down). Spread the butter outside of the bread. Heat a pan or grill or panini press over medium heat.

    Mix the dry ingredients (flour, cornstarch and salt) together in a large mixing bowl. Stir together until well combined. In a separate large mixing bowl, add the softened butter and sugar. Using a hand mixer or stand mixer, cream the butter and sugar together for 1-2 minutes. Add the egg yolk, vanilla extract and lemon juice and beat for another minute. Pour the dry ingredients on top of the wet ingredients. Stir the batter together until no dry flour remains.

    Preheat oven to 325 degrees. Place the oven rack on the lower middle level. Spray a bundt pan with vegetable oil or non-stick cooking spray, set aside. In a large bowl whisk together the dry ingredients. Add the flour, salt, and baking soda, whisking until fully incorporated, set aside. In a small heat-proof bowl add the cocoa powder, 6 ounces of chocolate, and espresso powder. Carefully add the boiling water, whisking until chocolate is melted and mixture is thoroughly incorporated, set aside.
