    Driving through the countryside of Champagne, I try to put a name to the exact shade of rapeseed yellow that intersperses the lush green of the vines. Sadly my wine-shade lexicon proves unhelpful in this situation and I have to settle on the rather underwhelming: vivid. Vivid, as it turns out, is a rather good description of the region as a whole.

    The term ‘aperitivo’ has come to mean many things to many people, particularly as the phrase has been diluted with the passage of time. The name of that liminal period between the working day and the evening meal has its origins (born around the 1700s in conjunction with the arrival of vermouth to the city of Turin) in the ‘opening’ of the appetite for what’s to follow, and it has generally come to encompass something bitter to drink and something salty to snack on.
