Chefs and home cooks are increasingly turning their backs on farmed salmon and opting for trout, over concerns about antibiotic use and fishing practices. So it’s no surprise that trout sales are up 36 per cent year on year at Waitrose, with raw trout seeing the biggest increase, up more than 60 per cent. At Ocado, trout sales have jumped higher – up 54 per cent in 2024 compared to 2023.
