    Preheat the oven to 200C/180C Fan/Gas 6. Arrange the carrots and celeriac to a large roasting tin and the beetroot in a smaller one. Drizzle with ½ tablespoon of the oil each and season with salt and pepper. Roast for 20 minutes. (The beetroot is roasted separately to prevent the colour running, but you can roast them together in one large tin if you prefer.)Mix the onions with the remaining oil and season with salt.

    Pour the milk into a saucepan, add the bay leaves and bring to a simmer. Turn the heat off and leave to infuse. Bring a large pan of salted water to the boil, add the pasta and cook for 10 minutes. Add the cauliflower and broccoli, return to a simmer and cook for another 2–3 minutes until the pasta and vegetables are tender. Drain into a colander and set over the pan. Meanwhile, melt the spread in a saucepan over a medium heat.

    Place the tahini, extra virgin olive oil, cumin, lemon juice and 1 finely chopped garlic clove in a blender with a good pinch of sea salt and 150ml/5fl oz cold water. Blend to a smooth, airy sauce. Set aside. Heat the olive oil in a very large saucepan over a medium heat and add the crushed garlic and onions. Fry for about 8 minutes. Add the chard stalks and sea salt and continue frying for another 10–12 minutes or until the stalks are very soft.
