I just had to ask Sixthman CEO Jeff Cuellar about what highlights of the cruise stood out as a person behind the scenes. He responded, “A front row seat to sushi pizza with Richard Blais, getting to taste a 1971 Old Taylor in the Secret Sauce Speakeasy, dancing the night away with Maneet as the DJ…there were so many once in a lifetime moments from over 75 unique events that I am still trying to process everything.

Speaking of bread, when you sit down at your table you will be brought the most amazing rustic breads ranging anywhere from whole wheat to sourdough to olive. It’s likely that the loaves only came out of the oven five or six hours before you sat down, and when you take a bite, you’ll swear it’s the best bread in town—especially since it is served with opaque herbed deep green EVOO that is reminiscent of pesto.

A SEXY VIBE On my recent trip to Valerie, I was all wide eyed when I saw the ultra-high ceilings, gorgeous lighted mirror behind the bar and matching steps. You get the feeling that you just walked into a 1920s speakeasy as you ease onto a blue or red tufted booth and get offered a cocktail.

On my visit, I fell in love with several dishes but the standouts were the huge Nizuc Cactus Salad featuring Hudson Harvest mixed greens, pea tendrils, crispy quinoa, avocado chunks, pickled cactus and a homemade citrus vinaigrette that is mild enough to let the other ingredients do the talking.
