Heat the oil in a large deep frying pan or wok over a medium heat. Add the seeds and curry leaves and fry until the curry leaves start to crackle. Add the onion, garlic, chillies, coriander stems and ginger and fry for a few minutes until the onion is starting to soften. Stir in the turmeric, cabbage, carrots and beans, season with salt and pepper and stir-fry for a few minutes until the vegetables start to collapse.

Preheat the oven to 180C Fan/Gas 4. Top and tail the aubergines and cut lengthways in half, and then each half lengthways again into 4 wedges. Sprinkle the flesh with salt and leave for 10 minutes. Place the baguettes into the hot oven and cook for 10-12 minutes or until golden-brown. While the baguettes cook and the aubergine is being salted, mix the rice vinegar and caster sugar together in a large bowl until the sugar has dissolved.

Prepare a large baking tray that can fit in the freezer by lining it with greaseproof paper. In a bowl, mix together the honey and yoghurt, then combine with the fruits. Spoon 12 blobs of the yoghurt and fruit mixture onto the tray and place in the freezer for 1 hour. If topping with chocolate, after an hour, melt the chocolate in the microwave in 30-second intervals, stirring between or using a bain marie.
