While there’s plenty of Ethiopian injera, Salvadoran pupusas and southern BBQ in the District, restaurant critics and residents alike have noted a lack of cheese-forward cuisine. Among the restaurateurs filling D.C.’s “black hole of cheese” is Jill Erber, the self-proclaimed cheese lady behind the restaurant and shop in Del Ray, Cheesetique.
