Mix the sugars with the melted butter in a large bowl. Add the egg and vanilla extract and continue to mix until fully combined. Mix in the gluten-free flour, xanthan gum, salt and bicarbonate of soda until combined. Add the crushed mini eggs and chocolate chips and give them a good mix in so they are dispersed evenly. Cover the bowl and place in the fridge for 45 minutes. Preheat the oven to 190C/170C Fan/Gas 5 and line a couple of baking trays with non-stick baking paper.

Preheat the oven to 180C/160C Fan/Gas 4 and line two large baking trays with parchment paper. Put the soft butter and the sugar in a bowl and beat with an electric whisk until smooth and creamy. Add the flour, lemon zest and milk and mix until you have a smooth dough. Take 2 sheets of parchment paper and put the dough in between them. Roll it out so it is around 3mm thick. If it’s a hot day and the dough is soft, you can chill the dough for up to an hour at this point.

Preheat the oven to 200C/180C Fan/Gas 6 and grease a non-stick 6-hole muffin tin with butter. Melt the butter in a saucepan over a low heat. Transfer into a large, heatproof bowl to cool completely. Once cool, mix in the flour, icing sugar, ground almonds, lemon zest and a pinch of salt. Whisk the egg whites in a separate bowl using an electric whisk (or in a stand mixer) until frothy. Gently fold the egg whites into the flour mixture until you have a thin batter.
