Rocky road mixture is put into a pudding basin and then drizzled with melted white chocolate and topped with a sprig of fake holly to resemble a traditional Christmas pudding. Feel free to swap the homemade ginger biscuits for 150g/5½oz biscuits of your choice. If you're not baking biscuits start at step 7.

Krok 1: Parmezan ścieramy na tarce o drobnych oczkach (możemy też kupić starty w torebce). Szparagi myjemy, osuszamy i odrywamy zdrewniałą część łodygi (nie obieramy). Szczypior płuczemy, następnie siekamy na drobno. Cytrynę myjemy, parzymy i ścieramy skórkę. Owoc przecinamy na pół i wyciskamy z niego sok. Szynkę (np. gotowaną) kroimy na drobne kawałki.

Heat the oil in a saucepan over a medium-high heat and cook the prawns and garlic for 3 mins until the prawns are pink. Remove the prawns to a bowl and set aside. Pour the stock into the pan with some seasoning and bring to the boil. Add the pasta and cook, covered, for 10 mins, stirring occasionally. After 5 mins, add the broccoli. When the pasta and broccoli have almost cooked through, add the peas. Uncover and continue to cook until the peas have defrosted, about 2-3 mins.

Heat the oven to 180C/160C Fan and line a 20cm/8in square baking tin with parchment paper. Put the butter and chocolate into a heat-proof bowl and melt either in short bursts in the microwave or suspended over a pan of simmering water (do not let the bottom of the bowl touch the water). Leave to cool slightly to room temperature. Put the eggs and caster sugar into a large bowl (or the bowl of a stand mixer) and whisk using an electric whisk until light, pale and fluffy.

Preheat the oven to 180C/160C Fan/Gas 4 and line two large baking trays with parchment paper. Put the soft butter and the sugar in a bowl and beat with an electric whisk until smooth and creamy. Add the flour, lemon zest and milk and mix until you have a smooth dough. Take 2 sheets of parchment paper and put the dough in between them. Roll it out so it is around 3mm thick. If it’s a hot day and the dough is soft, you can chill the dough for up to an hour at this point.

Preheat the oven to 200C/180C Fan/Gas 6 and grease a non-stick 6-hole muffin tin with butter. Melt the butter in a saucepan over a low heat. Transfer into a large, heatproof bowl to cool completely. Once cool, mix in the flour, icing sugar, ground almonds, lemon zest and a pinch of salt. Whisk the egg whites in a separate bowl using an electric whisk (or in a stand mixer) until frothy. Gently fold the egg whites into the flour mixture until you have a thin batter.

Line a muffin tin with large muffin cases. Heat the oven to 180C/160C fan/gas 4. Tip all the ingredients in a large bowl and mix until smooth using a wooden spoon or an electric whisk. Spoon tablespoons of the batter into the muffin cases until they’re three-quarters full (you can make up to six, depending on the case size). Bake for 30 mins or until a skewer comes out clean. Leave on a cooling rack to cool completely. Meanwhile, make the icing.
