After 30 years inside the Walt Disney World Dolphin Hotel, Shula's Steak House is being punted in favor of some fresh meat. Bourbon Steak, Michael Mina's pricey paean to pyrolized proteins, is replacing the football legend's chophouse, which will take its final reservation June 14. Bourbon Steak's Orlando outpost will be the restaurant's 10th location and will incorporate distinct features and details when it opens later this summer.

At the age of 13, chef Danilo "DJ" Tangalin was helping his mom make classic Filipino one-pot dishes out of a food shack in Baguio City. He'd grill skewers of meat, seafood and veg every day after school. On weekends, he'd make halo-halo by shaving a massive block of ice that he first had to lug from a wet market. The memories are clearly indelible for Tangalin. "I had the best time," he says.
