By Hannah McClure – Cowboy caviar is one of my favorite year-round snacks. It is one of the best salsas I’ve had. Next to Pico de Gallo, I’d say it’s my favorite. And while it is best made with fresh-from-the-garden ingredients, using store-bought or locally sourced ingredients is just as yummy. This recipe is easy to pull together, regardless of your lifestyle and what season it is. In my current stage of life, as a busy, single mom, I do my best to put healthy meals together more often than not.

They also make an excellent substitute for after-school snacks or tossed in school lunches. I originally had these ham and cheese poppers at a friend’s house in my 20s. His mom had them out and offered them to us for a snack. I remember biting in and thinking, “Oh my goodness, what are these?” Over the years, I’ve played with them and changed up the original recipe to make it my own.
