Using a large pan on a medium heat, warm the oil and add the mustard seeds. Cook until they begin to pop, then add the curry leaves and fry for 30 seconds. Add the shallots, garlic, ginger and coriander stalks, and season with salt and pepper. Cook for about 10 minutes, stirring often, or until the shallots soften. Once softened, add some or all of the chilli (depending on your taste) and turmeric. Cook for a further minute before stirring in the coconut milk and vegetable stock (or water).

Place a large frying pan on a medium heat and add the olive oil, shredded Brussels sprouts and chestnuts. Season with salt and pepper and cook, stirring often, for about 10 minutes, or until the sprouts have softened. Add a splash of water if the pan begins to look dry. Once softened, add the cream, most of the nutmeg and 40g/1½oz of the Parmesan. Stir well, bring to a simmer, then turn off the heat. Check the seasoning. Meanwhile, bring a large pan of salted water to a boil.

First marinade the turkey. Whisk the soy sauce, lime juice, sugar, chilli powder and five-spice together. Put the turkey in a dish, pour over the marinade and toss. Cover with cling film and leave to stand. For the peanut sauce, heat the oil in a frying pan and add the shallots. Cook on a medium heat until they are translucent and have taken on some colour, then add the garlic, ginger and chillies. Continue to cook, stirring regularly, for another 2–3 minutes, then add the remaining sauce ingredients.

Preheat the oven to 220C/200C Fan/Gas 7. In a roasting tin, toss together the onions and peppers with a tablespoon of the oil and some salt and freshly ground black pepper. Add the garlic cloves and roast for 12–15 minutes, or until the vegetables are starting to char. Reduce the oven temperature to 200C/180C Fan/Gas 6 and place a flat baking tray in the oven to heat up. Remove the vegetables.

To make the pastry, put the flour, salt and butter in a large bowl. Rub the butter gently through the flour, make sure that chunks of butter remain in the mixture. Gradually add the cold water and lemon juice. Use your hands to bring the ingredients together into a rough dough. Tip the dough out onto a lightly floured work surface and form into a scraggy ball. Chill in the fridge for 15 minutes.
