Serves 2. Ready in 30 minutes. I am making the most of the Alphonso mangoes before they disappear. They are especially good with lime juice and, perhaps surprisingly, elderflower. Once they are ripe, it is best to keep them in the fridge, then bring them out half an hour or before you intend to eat them. Put 70g of caster or granulated sugar into a saucepan, pour in 150ml of water and bring to the boil. Finely grate the zest of a lime, then squeeze the juice into a small bowl.

Derby City Council councillors have approved a licensing application to hold a new weekend festival at Derby Rugby Club (Haslams Lane) in August. Excited organisers hope the Darley Abbey festival can become a big hit and be an annual event for the city. But a meeting was required for a decision because concerns had been raised in the community about potential noise issues.

There was much clutter and mess on the table after we finished last weekend’s prawn and mango feast. The shellfish came sizzling and popping from the pan. We sucked the spicy seasoning from the shells, then tore at them with our fingers, pulling the crisp scales from the sweet white flesh beneath. The hot, spicy juice stung our lips.
