    I'm a massive fan of a big bacon chop. I'm not talking about a wimpy, flaccid cut off the loin,but a regal praetorian guard of a chop heralding 'Time for Dinner'. There is a deep, resonantbacony flavour to this meat than would stir the Irish in us. Before you know it you'll be onyour feet, at attention, singing 'Amhrán na bhFiann'.

    Serves: 8-12120g (4 1/2oz) dates, pitted & chopped150g (5oz) sultanas1 tsp bread soda250ml water60g (2oz) butter185g (7oz) Self Raising Flour125g (4 1/2oz) brown sugar2 eggs, lightly whiskedToffee sauce:140g (5oz) brown sugar2 tbsp golden syrup90g (3oz) butter185ml creamPreheat the oven to 180. Line a muffin tray with 8-12 paper cases (depending on size)Put the dates, sultanas and 250ml water into a pan. Bring to the boil, remove from the heat and stir in the bread soda.
