Bring a large pan of water to the boil and add a squeeze of lemon and glug of vinegar. Add the whole prawns and cook until they rise to the surface. Drain and chill in ice-cold water. Peel the cooled prawns, leaving one prawn whole per serving (for the garnish). Cut the little Little Gem lettuce in half and place in ice-cold water to crisp it up. For the sauce, mix all the sauce ingredients together. To assemble the cocktails, drain the lettuce and pat dry with kitchen paper.

Place the onion, artichokes and oil into a pan and add the thyme and bay leaf, tied together with string. Cover and sweat over a low heat for about 15 minutes, stirring occasionally. Add the stock and vinegar, season well with salt and freshly ground black pepper and bring up to the boil. Simmer for ten minutes, then taste and adjust the seasoning. Discard the thyme and bay leaf and pour into serving bowls. To serve, sprinkle with parsley. If using the bread and cheese, preheat the grill to medium.
