There are few things as delightful as an evening spent at Cupitt’s Estate, and the night I attended their Winemaker’s Signature Dinner was nothing short of magical. As I stepped into the vibrant, warm atmosphere of the winery, I could already sense it was going to be a special night. The table setting was stunning, with lush flowers, vines and red grapes forming a flowing centrepiece, and the sound of laughter filling the air as guests settled in.

I generally don’t like to mess with the perfection of voluptuous, sweet tree-ripened peaches any more than simply eating them over the kitchen sink to catch all the syrupy juices running down my chin. Sun-cooking is one of the very few exceptions. In warm climates, the late-summer sun is hot enough to concentrate the fruit’s juices into a soft-set preserve while retaining their just-picked flavour.

On one of the main roads in my hometown, a big neon pig highlighted quite possibly the best food smothered in barbecue sauce. And while my love of barbecue sauce started there, it has since become a staple in my vegetarian cooking. Here, I’ve paired my love of barbecue with the vegetarian ingredient I think is most meat-like: tempeh. The fermentation that tempeh undergoes helps create a texture that provides a toothsome bite, different from what tofu provides.
