The former Chick N Max space at 3520 N. Maize Road is about to get a new tenant — a locally owned breakfast chain that is expanding again. Eduardo Gonzalez said that he’s taking over the space for a third location of The Easy Egg, a breakfast-and-lunch restaurant that also operates at 5700 W. Kellogg and 3130 N. Rock Road. Gonzalez said he’s about to sign the contract for the space and hopes to have the restaurant open in mid-June.

When Wichita hits that springtime sweet spot — when it’s warm enough to sit outside but not so warm that the flies start to swarm — the hunt for a good patio happy hour gets more serious. Jeremy Wade, who three years ago opened Magnolia Cafe in the former Sweet Basil spot at 2424 N. Woodlawn, doesn’t want people to forget about his somewhat off-the-beaten-path patio, and he’s recently instituted a new Thursday-through-Saturday happy hour designed to help draw people there.

It’s been almost 10 weeks since an electrical fire forced the owners of Jimmie’s Diner at 1419 George Washington Drive to close their restaurant. But on Monday, it will finally reopen. And owner Linda Davidson said the restaurant’s regular customers are beyond ready to return. Many of them have been driving to the Jimmie’s Diner at 3111 N. Rock Road while their regular spot has been closed.

A couple of well-known Wichita restaurant owners are about to make some big changes. One of them is Natasha Ghandi-Rue, owner of The Kitchen. Last week, she closed her original restaurant at 725 E. Douglas and plans to reopen it soon as Express Kitchen. It will be designed for people who want to get in and get out quickly, something Gandhi-Rue says will work better, especially with the impending arrival of paid downtown parking.
