Nic Mink says it will feel different when people come to Seven Acre Dairy Co. in a few weeks. The owner of the boutique hotel, restaurant and events space is referring to a new concept that is slated to replace Seven Acre Dairy Co.’s The Kitchen restaurant at the end of April. Little Cloud Restaurant will draw from head chef Ben Serum’s French-cooking background and the cheeses and dairy products in sister operation Landmark Creamery’s body of work in Paoli.

Last May, I ate bugs for the first time. Not the kind you accidentally swallow when you’re riding a bike — or the hundreds you mythically ingest over a lifetime while you’re sleeping. These were plated very artfully with a pair of tweezers at a two Michelin-starred restaurant. I was dining at the famed Pujol in Mexico City. The bugs in question were flying ants, or chicatanas — a seasonal delicacy from Oaxaca, Mexico, ground into a sauce.

When Erin Gleeson moved to Madison last year, she had already written, photographed and illustrated five bestselling cookbooks. On April 15, she is set to release a new book, "The Watercolor Feast," that teaches readers how to emulate her style of watercolor painting in simple tutorials. “People are alway so drawn to the watercolors, [so] I thought, maybe I’ll do a book about painting the flowers and veggies,” says Gleeson, who has a professional background in food photography.
