The idea that you can never step in the same river twice is one that perfectly describes how I feel about Seattle's pop-up scene. It ebbs and flows constantly. Some pop-ups happen once or twice and fizzle out, while others - like Vindicktive Wings or Outsider BBQ - steadily gain steam on the road to becoming a full-time brick-and-mortar location. It's tough to maintain a pop-up.
