Chicken inasal is one of my favorite Filipino BBQ recipes — right up there with Filipino barbecue chicken and grilled pork skewers. Every summer we’d have big family cookouts at the forest preserves around Chicago, and I still remember the trays of grilled chicken and pork, pancit, crispy lumpia, and sweet Filipino fruit salad.
