I went to Douglas farmers’ market last Saturday for the first time in ages. I’ve had to don my Florence Nightingale outfit in recent years to care for a family member, Saturday becoming my rostered day, so it was a joy to return to what has always been a treasured experience. My children were practically reared in farmers’ markets, Douglas, in particular.

Amongst the very first to bring the concept of brunch to Ireland in 2005 with the opening of Liberty Grill, Denis O’Mullane and Marianne Delaney have long served as one of my personal benchmarks of good restaurateurs. Seasoned practitioners both, through multiple establishments, they are two of the most considered operators in Irish hospitality, so I relished the prospect of Probys Kitchen (PK) which opened last year, their partnership with chef Pat Browne, formerly of Ballymaloe Cookery School.

All bookings are by phone and only cash is accepted in payment. Yet, thanks to the online provocations of the chef/proprietor, Belfast-man Hugh Corcoran, it is already one of the most controversial and talked about restaurants in hospitality, garnering astonishing coverage, including a recent feature in The New York Times.
