    To make the noodle dough, put the plain flour and salt in a mixing bowl. Gradually add 135ml4½fl oz of room temperature water, combing the mixture with your hands or with chopsticks. Make sure to gradually add the water and mix until a shaggy dough forms. Once the dough has formed into a ball, knead the dough for 5 minutes. Put it back into the bowl, cover and let it rest for 15 minutes, then continue to knead for another 10 minutes, or until the surface of the dough is smooth and elastic.

    For the dough, mix the flour and salt in a bowl and then gradually pour in 120ml/4fl oz of room temperature water as you mix. Knead the dough for 10 minutes, or until it turns into a smooth ball, then let it rest covered for 30 minutes. Grease the dough and some kitchen scissors with a little vegetable oil, then use scissors to cut the dough into 2.5cm/1in pieces straight into a pan of boiling water. Turn the dough as you cut it (see video).

    To make the filling, in a bowl, rehydrate the dried mushrooms in a bowl of hot water for at least 15 minutes, then squeeze out the water from mushrooms before finely chopping the mushrooms. Reserve the mushroom water for later. Place the chopped cabbage in a bowl, sprinkle over the salt and leave for 15 minutes. Squeeze using your hands and drain any excess water from cabbage.
