STEP 1Halve the avocado and remove the pit. Scoop out the avocado flesh and add it to a blender or small food processor. STEP 2Add the garlic cloves, anchovy fillets, lemon juice, white-wine vinegar, salt, and pepper. Blend on high speed until smooth. STEP 3With the motor running, pour the olive oil into the mixture in a steady stream. STEP 4Use immediately, or store in a jar and refrigerate for up to three days.

STEP 1Slice the tomatoes into ¼-inch-thick rounds. Place in a large bowl. STEP 2In a small bowl, combine the rice vinegar, garlic, honey, sesame oil, avocado oil, and soy sauce. Whisk to mix well, then pour over the tomatoes, turning gently to coat. Marinate for half an hour at room temperature, or refrigerate for up to two hours. STEP 3Preheat the grill on high. If using charcoal, light the coals and wait until they’re coated with white ash, then cover the grill and preheat for 15 minutes.
