Put the cocoa powder in a medium bowl. Pour in the water and stir well, until the cocoa powder dissolves and forms a smooth paste. Whisk in around 100ml/3½fl oz of the milk until thoroughly combined, then pour into a slow cooker pot and whisk in the condensed milk and remaining milk. Cover with a lid and cook on low for 3–4 hours, or high for 1½–2 hours. Remove the lid and whisk the hot chocolate well to incorporate any cocoa that’s floated to the surface.

Pour the gin, lemon juice and elderflower cordial over the ice then shake vigorously for 8-10 seconds. • None Strain the mixture into a collins glass over fresh ice using a hawthorne cocktail strainer and a fine mesh strainer. If you don’t have a strainer, any kitchen sieve will work just as well. • None Top with the soda water and give it a gentle stir to combine everything. Garnish with the lemon slice if using.
