A grown-up restaurant is how Jo Myers describes the newly opened Swine Bistro that she runs with husband Stu. It certainly has all the tropes of a grown-up restaurant: exposed brick walls, white tablecloths, mismatched chairs and an open kitchen. On a Saturday evening and every table taken with chattering, happy diners, it couldn’t be more grown-up. Jo is beaming as if she can’t quite believe what is happening. ‘Look at this’ she says, spreading her arms, ‘and we’ve only been open three weeks’.

Last month I enjoyed a charity dinner at the beautiful Merchant Taylors Hall in York in aid of International Women’s Day. I found myself seated beside a retired property developer from Leeds. Looking for something in common, we got to talking about the restaurants we knew in Leeds, back in the day.

In 2022 the Grange Hotel, a handsome Regency mansion on Clifton in York, was bought by three brothers, Tristan, Tom and James Guest, who transformed it from traditional chintz to contemporary chic. And if your name is Guest, what else would you call it but the Guest House, one of a trio of boutique hotels the brothers have created in Margate and Bath, with Brighton due to open next year. The grey brick and porticoed entrance remains unchanged, but inside it’s had a total redesign.
