It’s practically a golden rule among North Carolinians: barbecue is a noun, not a verb. At Prime Barbecue in Knightdale, a sign inside the restaurant proudly proclaims that “BBQ is not a sauce.” Instead, barbecue is a way of life and the best food to eat, according to Prime owner and champion pitmaster Christopher Prieto. Preeti Waas' journey from stay-at-home mom to James Beard-nominated chef started with a simple desire. "I just like to cook and I like to feed people," Waas said. I didn't think I was a good cook of Indian cuisine," Waas said. Waas was busy raising her two daughters while her husband navigated his demanding job in California and Oklahoma.
