I make variations on beetroot gratin all the time, and this one with celeriac, dill and goat’s cheese is an absolute winner. You’ll want to use a mandoline (very carefully) for the celeriac, to make sure it’s sliced thinly enough to cook through in half an hour (alternatively, do everything in a food processor using the slicing/grating attachment). If you happen to have a bunch of salsify, or spot one when you’re out, by all means peel, slice and add that, too.

You can serve these in one of two ways: three scallops, each in large half-shells or small ramekins as a dinner party starter, or if you are lucky enough to have 18 small shells, serve them as canapes – my daughter appropriated my collection into her toy kitchen, so I had to beg for them back: “I’m making fish fingers in a shell!” She didn’t buy it. For anyone who isn’t a toddler, these are a lovely, easy, prep-ahead dish.

Today’s recipe takes great liberties with the base for the classic Sri Lankan aubergine pickle, wambatu moju, in which deep-fried aubergine and onions combine with turmeric, vinegar, chilli and pickling spices to create a moreish side dish. Here, I’ve used the same pickling spice base, but combined it with tomatoes and beans for protein, to make a lovely, flavour-packed weeknight curry.
