STEP 1In a medium pot, bring the water and 1 teaspoon olive oil to a boil, then add the couscous. Cover and lower the heat to simmer. Cook until the couscous is tender and the water is absorbed, about 10 minutes. STEP 2Remove from the heat and let cool or pour into a colander and rinse with cool water. STEP 3While the couscous is cooking, use a mandoline or sharp knife to thinly slice the sunchokes and Brussels sprouts.

STEP 1Preheat the oven to 400 degrees F. Coat a 9-x-13-inch baking dish with butter. STEP 2Heat a large saucepan over medium heat and add the apples, maple syrup, cinnamon, and nutmeg. Bring to a low boil and cook for about five minutes, until the apples are slightly softened. STEP 3In a small bowl, whisk the water, cornstarch, and lemon juice until smooth. Pour into the boiling apples and stir, then cook until the mixture has thickened, about two to three additional minutes.
