BEFORE LA CUADRA opened brick-and-mortar restaurants in Ballard and Kent earlier this spring, this wildly popular taqueria was out on the street - literally. Employees would set up a few card tables and roll out a vertical rotisserie of pork, showing up late night at locations around town. A taquero, whirling a blade with swashbuckling theatrics, carved charred pork from the flaming cylindrical trompo, catching the shavings in a corn tortilla that he held like a catcher's mitt in his other hand.
