I’m sure you’ve seen a version of this sweet treat over your social feeds at some point. Maritozzi are one of Rome’s most iconic pastries, they are soft and light, a little brioche bun filled with freshly whipped cream. I’d had serious food envy whenever someone posted one, nowhere near me sells them and I am yet to get one when down in London.

The scent of mafé instantly takes me back to my childhood. The peanut-based sauce, one of the mother sauces of West African cuisine, has some similarities with Mexican mole in that it is a nut-based sauce thickened through slow cooking. The classic West African mafé almost always has lamb, chicken, or fish, but I love the simplicity and elegance of the vegan version that I'm introducing here.

Denser and not as sweet as cupcakes, muffins make a great breakfast on the go. You can pack them with fruits, nuts, or chocolate. The combination here tastes wonderful whether you're using fresh raspberries in season (when they're cheaper) or frozen raspberries. To enhance the flavor of your desiccated coconut, you could toast it lightly (for 5 minutes or so) while preheating the oven-but keep an eye on it as it does turn brown very quickly.

My parents owned a pineapple farm, so when I was young the fruit was everywhere! No surprise, then, that this pineapple crumble reminds me of home. Pineapple works incredibly well with cinnamon and nutmeg, and the addition of sugar and butter creates a toffee-like base that I like to round off with a splash of rum. As always, you can omit it, but I feel a few drops add a little something to this dessert.
