Hi book pals,January was a big reading month over here. It was cold, the real world was generally bad, and I was awaiting feedback on my latest book draft, so had more reading time than usual. Which means, today’s book report is a long one. You might want to open it in your browser to see the whole thing… there’s lots of tasty book-to-screen news worth making it to the bottom for. Also, since I already told you my Onyx Storm thoughts the other week, I’ll skip them here.

Preheat the oven to 200C/180C Fan/Gas 6 and grease a 10–12-hole muffin tin. Mix the oat milk and vinegar together and leave for about 5 minutes to create a buttermilk-like consistency. Sift all the dry ingredients together in a large bowl. Pour the remaining wet ingredients into the milk and vinegar and whisk together. Fold the wet ingredients into the dry, making sure no pockets of flour have been left.

To make the base, blend the biscuits in a food processor until fine crumbs. Add the melted vegan butter and blitz again until combined. Press the crumbs into a 20cm/8inch cake tin with a loose base. Use the back of a spoon to compact the crumbs as much as you can in an even layer, pushing up at the sides to create the border for the filling. Refrigerate while making the filling. To make the filling, mix together the vegan cream cheese, sugar, lemon juice and zest, then fold in the crème fraîche.

Bring a large pan of salted water to the boil. Add the macaroni and cook until just al dente. To make the sauce, put all the ingredients apart from the vegan cheese into a bowl or blender and whisk or blend until smooth. Tip into a large pan over a low–medium heat. Add 100g/3½oz vegan cheese and cook until melted – but be careful not to bring it to a simmer. Preheat the grill to medium–high. Drain the pasta, then add to the cheese sauce and mix until coated.
